Let’s begin: Pho is pronounced “fuh” not “foh.” With that out of the way, we can move forward.

Hefty in size, healthy and healing, it’s like the comfort food of comfort foods (minus any fried-food guilt). Pho is the trademark Vietnamese meal featuring mounds of rice noodles steeped in a hot broth topped with fresh and crunchy veggies; choose your version with thinly sliced rare beef, shredded chicken, meatballs or (sometimes) tofu. First comes the signature side plate of garnishes with bean sprouts, onions, chili peppers, basil leaves and a lemon wedge; then comes the steaming round bowl. After you thrust in some Sriracha and hoisin sauce, you’ll be good to indulge in one of Southeast Asia’s most recognizable exports. 

The French-influenced beef broth and noodle soup that was birthed out of north Vietnam in the late 1800s is, lucky for us, readily available throughout the Bay Area. Afterall, one reason to welcome the incoming fog is the excuse to warm up with some pho. Crisscross your chopsticks and dig in with your white porcelain soup spoon at one of these BARTable Vietnamese restaurants, and don’t forget to start with some cha gio (those equally addictive fried imperial rolls) and pour-over Vietnamese iced coffee.
